Bran Muffin Recipe
Bran Muffins
These muffins are a healthy treat option, and they freeze well.
Ingredients:
2 cups Wheat Bran
2 ½cups Wholemeal flour
2 ½tsp Bicarbonate of Soda
½tsp Salt
2 Eggs
¼ – ½cup Brown sugar (I usually replace 1/4 cup sugar with an extra banana)
½cup Coconut oil
1tsp Vanilla essence
2cups Milk
½cup Rainsins
2 Apples – grated
2cups Carrots – grated
2 Bananas – mashed
Optional: Shredded coconut, Nuts and seeds
Method:
Mix all together.
Bake at 200°C for 20 minutes.
