Healthy school lunchbox snack – these can be frozen, and then defrost in the school lunchbox!

Ingredients

  • 120g Ham or Bacon
  • 120g Grated cheese
  • 2 Eggs
  • 1 teaspoon Parsley, finely chopped
  • Half an onion, finely chopped
  • 1 cup of Milk (or milk alternative)
  • ½ – 1 teaspoon Mustard powder
  • 3 tablespoons self-raising Flour
  • ½ teaspoon Baking powder
  • Salt and Pepper

Method

Mix ingredients together, and pour into a greased pie dish, muffin pans or mini muffin pans, and bake until golden brown

If using bacon, fry the onion and bacon together first, then mix all ingredients together.
